Le Marche offers many unique epicurean delights such as: the ciaùscolo from Visso, a soft cured pork salami that spreads as easily as paté or butter; il formaggio di fossa di Talamello, a strong-tasting cavern-aged cheese; the tiny lentils from Castelluccio. And of course there are the many popular traditional dishes: vincisgrassi, the Le Marche version of lasagna; gnocchi, a small potato dumpling; and tagliatelle with a gosling or wild game sauce; il coniglio in porchetta, rabbit stuffed with wild fennel; le pizze al formaggio, cheese pizza; and the much-loved cicerchia, a small Marchegianan legume similar to the chickpea, and lonzino di fico, a local sweet made with figs, dried fruits and nuts, shaped like a salami [lonzino] and wrapped in fig leaves.
